Marry Me Beef Bourguignon
This classic French beef stew is slow-cooked to perfection, creating a rich and flavorful dish that will make you fall in love with every bite!

Ingredients:
2 lb beef chuck, cut into 2-inch cubes
6 oz bacon, chopped
2 tbsp all-purpose flour
2 cups red wine
2 cups beef broth
1 onion, chopped
3 cloves garlic, minced
2 carrots, sliced
1 lb mushrooms, halved
2 tbsp tomato paste
2 sprigs fresh thyme
Salt and pepper to taste

Directions:
1. In a large Dutch oven, cook the bacon over medium heat until crispy. Remove and set aside, leaving the bacon fat in the pot.
2. Season the beef with salt and pepper, then brown the cubes in batches in the bacon fat. Remove and set aside.
3. Add onions, garlic, and carrots to the pot. Cook until onions are translucent.
4. Stir in flour and tomato paste, then slowly pour in the red wine and beef broth, stirring to combine.
5. Return the beef and bacon to the pot, add thyme, and bring to a simmer. Cover and cook on low heat for 2 hours.
6. Add mushrooms and continue cooking for an additional 30 minutes until the beef is tender.
7. Season with salt and pepper to taste before serving.
