Marry Me Cucumber Gazpacho
Cool as a cucumber and bursting with fresh flavors, this gazpacho will make you fall in love at first sip!

Ingredients:
2 large cucumbers, peeled and chopped
1 green bell pepper, seeded and chopped
1 small red onion, chopped
2 cloves garlic, minced
3 cups vegetable broth
1/4 cup fresh parsley, chopped
2 tbsp olive oil
2 tbsp red wine vinegar
Salt and pepper to taste

Directions:
1. In a blender, combine cucumbers, bell pepper, red onion, garlic, and vegetable broth. Blend until smooth.
2. Add parsley, olive oil, and red wine vinegar. Blend again until well combined.
3. Season with salt and pepper, adjusting to taste. Chill in the refrigerator for at least 1 hour.
4. Serve cold, garnished with a drizzle of olive oil and some extra chopped parsley.
