Marry Me Pistachio Cake
This decadent pistachio cake is so irresistible, it might just lead to marriage proposals!
Ingredients:
1 cup shelled pistachios, finely ground
1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
4 large eggs
1 tsp vanilla extract
1/2 cup milk
Green food coloring (optional)
For the frosting:
1 cup unsalted butter, softened
4 cups powdered sugar
1/4 cup milk
1 tsp almond extract
Chopped pistachios for garnish
Directions:
1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2. In a bowl, combine ground pistachios, flour, baking powder, and salt.
3. In a separate bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
4. Gradually add the dry ingredients to the wet mixture, alternating with milk. Mix until just combined. Add green food coloring if desired.
5. Divide batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow cakes to cool completely.
6. For the frosting, beat butter until creamy. Gradually add powdered sugar, milk, and almond extract, beating until smooth and spreadable.
7. Place one cake layer on a serving plate, spread frosting over the top, then place the second cake layer on top. Frost the top and sides of the cake. Sprinkle chopped pistachios on top for garnish.
