Marry Me Ratatouille

Ingredients:
1 large eggplant, diced
2 zucchinis, sliced
1 yellow bell pepper, chopped
1 red onion, sliced
3 tomatoes, diced
4 cloves garlic, minced
2 tbsp olive oil
1 tsp dried oregano
1 tsp dried basil
Salt and pepper to taste

Directions:
1. Preheat the oven to 375°F (190°C).
2. In a large baking dish, combine all the diced and sliced vegetables.
3. Drizzle olive oil over the vegetables and sprinkle with garlic, oregano, basil, salt, and pepper. Toss to coat evenly.
4. Cover the dish with foil and bake for 45 minutes, then uncover and bake for an additional 15 minutes until vegetables are tender.
5. Serve hot as a side dish or over cooked pasta or crusty bread.
