Marry Me Zucchini Fritters
These irresistible zucchini fritters will make your taste buds fall in love with every crispy bite!

Ingredients:
2 medium zucchinis, grated and excess water squeezed out
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1 clove garlic, minced
1/4 tsp salt
1/4 tsp black pepper
1 large egg, beaten
2 tbsp olive oil

Directions:
1. In a bowl, combine grated zucchini, breadcrumbs, Parmesan cheese, parsley, garlic, salt, pepper, and beaten egg. Mix until well combined.
2. Heat olive oil in a skillet over medium heat.
3. Scoop a spoonful of the zucchini mixture and form it into a patty shape. Place it in the skillet and flatten gently with a spatula. Repeat for the remaining mixture.
4. Cook the fritters for about 3-4 minutes on each side until golden brown and crispy.
5. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
6. Serve the zucchini fritters hot with a side of sour cream or your favorite dipping sauce.
