Mary Me Chickpeas Two Ways
Savor the blend of aromatic spices and hearty chickpeas in these two delightful vegetarian dishes that are sure to win your heart!
Ingredients:
– 15 oz canned chickpeas, drained and rinsed
– 2 tbsp olive oil
– 1 small onion, finely chopped
– 2 cloves garlic, minced
– 1 red bell pepper, diced
– 1 tsp ground cumin
– 1 tsp smoked paprika
– 1/2 tsp turmeric
– 1/4 tsp cayenne pepper
– Salt and pepper to taste
– 1 cup cherry tomatoes, halved
– 2 tbsp fresh cilantro, chopped
– 1 lemon, juiced
Directions:
1. In a large skillet, heat olive oil over medium heat. Add onion and sauté until translucent.
2. Stir in garlic, bell pepper, cumin, paprika, turmeric, cayenne, salt, and pepper. Cook for 2-3 minutes.
3. Add chickpeas and cherry tomatoes. Cook for another 5-7 minutes until heated through.
4. Remove half of the chickpea mixture and set aside.
5. To the remaining chickpeas in the skillet, squeeze lemon juice and sprinkle cilantro. Mix well.
6. In another pan, add the reserved chickpea mixture and cook for an additional 2-3 minutes.
7. Serve the lemon-cilantro chickpeas and the spiced chickpeas side by side for a flavorful contrast!
