Mediterranean Orzo Salad
This refreshing and colorful salad is a delightful blend of Mediterranean flavors that will transport you to sunny coastlines with every bite!
Ingredients:
8 oz orzo pasta
1 cup cherry tomatoes, halved
1/2 English cucumber, diced
1/4 cup Kalamata olives, sliced
1/4 cup red onion, finely chopped
1/2 cup feta cheese, crumbled
1/4 cup fresh parsley, chopped
3 tbsp olive oil
2 tbsp lemon juice
1 tsp dried oregano
Salt and pepper to taste
Directions:
1. Cook the orzo pasta according to package instructions. Drain and rinse under cold water to cool.
2. In a large bowl, combine the cooked orzo, cherry tomatoes, cucumber, olives, red onion, feta cheese, and parsley.
3. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper to make the dressing.
4. Pour the dressing over the salad and toss gently to combine.
5. Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
6. Serve chilled and garnish with additional parsley if desired.
