Mediterranean Quinoa Burrito Bowl

Ingredients:
1 cup quinoa, cooked
1 can (15 oz) chickpeas, drained and rinsed
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, thinly sliced
1/3 cup Kalamata olives, pitted and chopped
1/4 cup fresh parsley, chopped
1/4 cup crumbled feta cheese
2 tbsp olive oil
2 tbsp lemon juice
1 tsp dried oregano
Salt and pepper to taste
Directions:
1. In a large bowl, combine cooked quinoa, chickpeas, cherry tomatoes, cucumber, red onion, olives, parsley, and feta cheese.
