Mediterranean Quinoa Burrito Bowl
Elevate your burrito game with this nutritious and flavorful Mediterranean twist on a classic favorite!

Ingredients:
1 cup quinoa, cooked
1 can (15 oz) chickpeas, drained and rinsed
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, thinly sliced
1/3 cup Kalamata olives, pitted and chopped
1/4 cup fresh parsley, chopped
1/4 cup crumbled feta cheese
2 tbsp olive oil
2 tbsp lemon juice
1 tsp dried oregano
Salt and pepper to taste

Directions:
1. In a large bowl, combine cooked quinoa, chickpeas, cherry tomatoes, cucumber, red onion, olives, parsley, and feta cheese.
2. In a small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and pepper to make the dressing.
3. Pour the dressing over the quinoa mixture and toss until well combined.
4. Divide the mixture into serving bowls and enjoy the Mediterranean flavors in a burrito bowl!
