Mexican Street Corn Pasta

Ingredients:
12 oz penne pasta
2 tbsp olive oil
2 cups corn kernels
1/2 cup mayonnaise
1/2 cup sour cream
1/2 cup cotija cheese, crumbled
1/4 cup fresh cilantro, chopped
1 tsp chili powder
1 lime, juiced
Salt and pepper to taste
Directions:
1. Cook the penne pasta according to package instructions. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add corn kernels and cook until slightly charred, about 5 minutes.
3. In a small bowl, mix mayonnaise, sour cream, half of the cotija cheese, cilantro, chili powder, lime juice, salt, and pepper.
4. Add the cooked pasta to the skillet with the corn. Pour the mayonnaise mixture over the pasta and toss to combine.
5. Serve the pasta hot, garnished with the remaining cotija cheese and extra cilantro.
