Middle Eastern Lamb Kofta with Tzatziki
Indulge in the aromatic blend of Middle Eastern spices with juicy lamb kofta served alongside creamy, dairy-free tzatziki – a paleo delight!

Ingredients:
– 1 lb ground lamb
– 1 small onion, grated
– 2 cloves garlic, minced
– 1 tsp ground cumin
– 1 tsp ground coriander
– 1/2 tsp ground cinnamon
– 1/4 tsp cayenne pepper
– Salt and pepper to taste
– 1/4 cup fresh parsley, chopped
– 1/4 cup fresh mint, chopped
– 1 large cucumber, grated and excess water squeezed out
– 1 cup coconut milk yogurt
– 1 tbsp fresh dill, chopped
– 1 tbsp lemon juice
– Salt to taste

Directions:
1. In a bowl, mix ground lamb, onion, garlic, spices, herbs, salt, and pepper until well combined. Divide and shape into 1-inch thick oval kofta.
2. Preheat grill or skillet over medium-high heat. Cook kofta for 4-5 minutes per side until browned and cooked through.
3. For the tzatziki, combine cucumber, coconut milk yogurt, dill, lemon juice, and salt in a bowl. Mix well and refrigerate until ready to serve.
4. Serve the lamb kofta hot with a dollop of tzatziki on top.
