Miso Glazed Carrots with Ginger Tofu
Transform your usual tofu dish with a flavorful miso glaze and pair it with tender, caramelized carrots for a vegetarian delight that’s both savory and sweet!
Ingredients:
– 14 oz firm tofu, cubed
– 1 lb carrots, peeled and sliced into sticks
– 2 tbsp miso paste
– 2 tbsp soy sauce
– 1 tbsp maple syrup
– 1 tbsp grated ginger
– 2 cloves garlic, minced
– 2 tbsp vegetable oil
– Sesame seeds and green onions for garnish
Directions:
1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a bowl, whisk together miso paste, soy sauce, maple syrup, grated ginger, and minced garlic.
3. Toss tofu cubes in half of the miso mixture until well coated. Place tofu on the baking sheet.
4. Roast tofu for 25-30 minutes, flipping halfway through, until golden and crisp.
5. In a separate bowl, toss carrot sticks with the remaining miso mixture.
6. Heat vegetable oil in a skillet over medium heat. Add the glazed carrots and cook for 10-12 minutes, stirring occasionally, until caramelized and tender.
7. Serve the miso glazed tofu with ginger carrots, garnished with sesame seeds and green onions.
