Miso Glazed Carrots with Sesame Tofu
Indulge in a symphony of flavors with these caramelized miso glazed carrots paired with crispy sesame tofu – a vegetarian dish that’ll leave you craving for more!

Ingredients:
– 1 lb carrots, peeled and sliced into sticks
– 2 tbsp white miso paste
– 2 tbsp maple syrup
– 1 tbsp soy sauce
– 1 block firm tofu, pressed and cut into cubes
– 2 tbsp cornstarch
– 2 tbsp sesame oil
– 1 tbsp sesame seeds
– Green onions, chopped for garnish

Directions:
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a bowl, mix miso paste, maple syrup, and soy sauce. Toss carrots in half of the miso glaze until coated.
3. Place carrots on the baking sheet in a single layer and roast for 25-30 minutes, or until caramelized.
4. While carrots roast, coat tofu cubes in cornstarch.
5. In a skillet, heat sesame oil over medium-high heat and add tofu cubes. Cook until crispy on all sides.
6. Drizzle remaining miso glaze over the tofu and sprinkle with sesame seeds.
7. Serve the miso glazed carrots with sesame tofu, garnished with green onions.
