Ingredients:
– 2 parsnips, peeled and sliced into rounds (8 oz)
– 2 carrots, peeled and sliced into rounds (8 oz)
– 1 sweet potato, peeled and cubed (8 oz)
– 1 red onion, cut into wedges
– 2 tbsp olive oil
– 3 tbsp white miso paste
– 2 tbsp maple syrup
– 2 cups cooked wild rice
– Salt and pepper to taste
– Fresh parsley, chopped for garnish
Directions:

2. In a bowl, whisk together olive oil, miso paste, and maple syrup.
