Ingredients:
– 2 tbsp olive oil
– 1 onion, diced
– 3 cloves garlic, minced
– 1 red bell pepper, sliced
– 1 yellow bell pepper, sliced
– 1 cup cherry tomatoes, halved
– 1 cup green beans, trimmed
– 1 cup artichoke hearts, quartered
– 1 cup short-grain rice
– 2 1/2 cups vegetable broth
– 1 tsp smoked paprika
– 1/2 tsp saffron threads
– Salt and pepper to taste
– 1/4 cup fresh parsley, chopped
– Lemon wedges for serving
Directions:
1. Heat olive oil in a large skillet or paella pan over medium heat.
2. Add onion and garlic, sauté until softened.
3. Stir in bell peppers and cook for 3-4 minutes.
4. Add cherry tomatoes, green beans, and artichoke hearts, cook for another 2 minutes.
5. Stir in rice, vegetable broth, smoked paprika, saffron, salt, and pepper.
6. Bring to a boil, then reduce heat to low and simmer for 20-25 minutes until rice is tender.
7. Remove from heat and let it sit for 5 minutes before fluffing with a fork.
8. Garnish with fresh parsley and serve with lemon wedges.
