- 1 bag of tortilla chips
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn kernels
- 1/4 cup sliced jalapeños
- 1/2 cup diced tomatoes
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- 1/2 cup sour cream
- 1/2 cup guacamole
- 1/4 cup sliced black olives (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Spread a layer of tortilla chips evenly on a large baking sheet or oven-safe platter.
- Sprinkle half of the cheddar cheese and Monterey Jack cheese over the chips.
- Add the black beans and corn evenly over the cheese layer.
- Add another layer of tortilla chips on top of the beans and corn.
- Sprinkle the remaining cheese over the new layer of chips.
- Scatter the sliced jalapeños, diced tomatoes, and black olives (if using) over the top.
- Bake in the preheated oven for about 10-15 minutes, or until the cheese is fully melted and bubbly.
- Remove from the oven and immediately sprinkle with chopped green onions and cilantro.
- Serve hot with dollops of sour cream and guacamole on top or on the side.
