One-Pan Chicken and Sweet Potato Skillet
This savory and wholesome one-pan meal is perfect for busy weeknights, combining juicy chicken, tender sweet potatoes, and flavorful herbs and spices.

Ingredients:
– 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
– 2 medium sweet potatoes, peeled and diced
– 1 red bell pepper, seeded and chopped
– 1 yellow onion, diced
– 2 cloves garlic, minced
– 2 tbsp olive oil
– 1 tsp dried thyme
– 1 tsp paprika
– 1/2 tsp cayenne pepper
– Salt and pepper to taste

Directions:
1. In a large skillet, heat olive oil over medium-high heat.
2. Add chicken pieces and cook until browned, about 5-6 minutes.
3. Stir in sweet potatoes, red bell pepper, onion, and garlic. Cook for another 5 minutes, stirring occasionally.
4. Season with thyme, paprika, cayenne pepper, salt, and pepper. Mix well to coat the ingredients.
5. Cover the skillet and let it simmer for 10-12 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
6. Serve hot and enjoy this flavorful dish straight from the pan!
