One-Pot White Chicken Chili
Warm up with this hearty and flavorful one-pot white chicken chili that’s perfect for cozy nights in!

Ingredients:
– 1 lb boneless, skinless chicken breasts, cubed
– 1 onion, diced
– 2 cloves garlic, minced
– 2 cans (15 oz each) cannellini beans, drained and rinsed
– 1 can (4 oz) diced green chilies
– 4 cups chicken broth
– 1 tsp cumin
– 1 tsp oregano
– 1/2 tsp chili powder
– Salt and pepper to taste
– 1 cup frozen corn
– Juice of 1 lime
– Fresh cilantro, for garnish

Directions:
1. In a large pot, sauté chicken, onion, and garlic until chicken is no longer pink.
2. Add cannellini beans, green chilies, chicken broth, cumin, oregano, chili powder, salt, and pepper. Bring to a simmer.
3. Cover and let it simmer for 30 minutes, stirring occasionally.
4. Add corn and lime juice, simmer for an additional 10 minutes.
5. Taste and adjust seasonings if needed.
6. Serve hot, garnished with fresh cilantro.
