Ingredients:
– 4 halibut fillets, 6 oz each
– 8 oz morel mushrooms, sliced
– 1 lb asparagus, trimmed
– 2 tbsp olive oil
– Salt and pepper to taste
– 2 cloves garlic, minced
– 1 lemon, zested and juiced
Directions:
1. Preheat the oven to 400°F (200°C).
2. Season halibut fillets with salt, pepper, and lemon zest.
3. In an oven-safe skillet, heat olive oil over medium-high heat. Sear the halibut fillets for 2 minutes per side.
4. Transfer the skillet to the oven and roast for 8-10 minutes until fish flakes easily with a fork.
