Pan-Seared Halibut with Spring Vegetable Sauté
Elevate your dinner with this light and flavorful dish featuring perfectly seared halibut and a medley of vibrant spring vegetables!

Ingredients:
– 4 halibut fillets, 6 oz each
– 1 cup cherry tomatoes, halved
– 1 bunch asparagus, trimmed and cut into 2-inch pieces
– 1 yellow bell pepper, sliced
– 1 small red onion, thinly sliced
– 3 cloves garlic, minced
– 2 tbsp olive oil
– 2 tbsp lemon juice
– Salt and pepper to taste
– Fresh parsley for garnish

Directions:
1. Season halibut fillets with salt and pepper on both sides.
2. In a large skillet, heat olive oil over medium-high heat. Add halibut fillets and sear for 4-5 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
3. In the same skillet, add cherry tomatoes, asparagus, bell pepper, red onion, and garlic. Sauté for 5-6 minutes until vegetables are tender-crisp.
4. Drizzle lemon juice over the vegetables and season with salt and pepper.
5. Return the halibut fillets to the skillet, nestling them among the vegetables. Cook for another 2-3 minutes to heat through.
6. Garnish with fresh parsley before serving.
