Peach Crumb Bars
Indulge in the juicy sweetness of summer peaches enveloped in a buttery crumbly crust with these irresistible Peach Crumb Bars.

Ingredients:
– 2 cups all-purpose flour
– 1 cup granulated sugar
– 1/2 tsp baking powder
– 1/4 tsp salt
– 1/2 cup unsalted butter, cold and cubed
– 1 egg
– 1 tsp vanilla extract
– 4 cups fresh peaches, peeled and sliced
– 1/2 cup brown sugar
– 2 tbsp cornstarch
– 1/2 tsp cinnamon

Directions:
1. Preheat the oven to 375°F (190°C) and grease a 9×9-inch baking pan.
2. In a mixing bowl, combine flour, granulated sugar, baking powder, and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
3. Beat the egg and vanilla extract, then mix into the crumbly mixture until a dough forms.
4. Press two-thirds of the dough into the bottom of the prepared pan to form the crust.
5. In another bowl, toss sliced peaches with brown sugar, cornstarch, and cinnamon until well coated. Spread the peach mixture over the crust.
6. Crumble the remaining dough over the peaches to create a crumb topping.
7. Bake for 45-50 minutes or until the top is golden brown and the peaches are bubbling.
8. Allow to cool completely before slicing into bars. Enjoy!
