Peas Cakes
These crispy and flavorful pea cakes are a delightful twist on traditional veggie patties, packed with wholesome ingredients and a burst of green goodness!
Ingredients:
– 2 cups green peas, cooked
– 1/2 cup breadcrumbs
– 1/4 cup feta cheese, crumbled
– 1/4 cup red onion, finely chopped
– 1 clove garlic, minced
– 1/4 cup fresh parsley, chopped
– 1 egg
– Salt and pepper to taste
– Olive oil for frying
Directions:
1. In a mixing bowl, mash the cooked green peas with a fork or potato masher.
2. Add breadcrumbs, feta cheese, red onion, garlic, parsley, egg, salt, and pepper to the peas. Mix until well combined.
3. Form the mixture into small patties using your hands.
4. Heat olive oil in a skillet over medium heat.
5. Fry the pea cakes for 3-4 minutes on each side until golden brown and crispy.
6. Remove from the skillet and place on a paper towel to drain excess oil.
7. Serve hot with your favorite dipping sauce or on a bed of mixed greens.
