Pistachio Cranberry Biscotti
Crunchy and sweet, these biscotti are loaded with the rich flavors of pistachios and tart cranberries, perfect for a delightful tea-time treat!

Ingredients:
– 2 cups all-purpose flour
– 1 cup granulated sugar
– 1 tsp baking powder
– 1/2 tsp salt
– 3 large eggs
– 1 tsp vanilla extract
– 1/2 cup shelled pistachios, chopped
– 1/2 cup dried cranberries

Directions:
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a bowl, whisk together flour, sugar, baking powder, and salt.
3. Beat eggs and vanilla extract in a separate bowl until light and frothy.
4. Gradually add the dry ingredients to the egg mixture, then fold in pistachios and cranberries.
5. Divide the dough in half and shape each half into a log on the baking sheet.
6. Bake for 25-30 minutes until firm to the touch. Remove from the oven and let cool for 10 minutes.
7. Using a serrated knife, slice the logs into 1-inch wide biscotti.
8. Place the biscotti cut side down on the baking sheet and bake for an additional 10-15 minutes until crispy.
9. Cool completely before serving.
