Raspberry White Chocolate Mousse
Indulge in a luscious blend of sweet white chocolate and tart raspberries with this airy and elegant mousse!
Ingredients:
– 6 oz white chocolate, chopped
– 1 cup fresh raspberries
– 2 cups heavy cream
– 1/4 cup powdered sugar
– 1 tsp vanilla extract
– Fresh raspberries, for garnish
Directions:
1. In a heatproof bowl, melt the white chocolate over a double boiler or in the microwave, stirring until smooth. Let it cool slightly.
2. In a blender, puree the fresh raspberries until smooth. Strain the mixture to remove the seeds.
3. In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
4. Gently fold the melted white chocolate and raspberry puree into the whipped cream until well combined.
5. Divide the mousse into serving glasses and chill in the refrigerator for at least 2 hours to set.
6. Before serving, garnish with fresh raspberries and a sprinkle of grated white chocolate.
