Elevate your Easter feast with this vibrant and flavorful vegetarian lasagna that celebrates the sweetness of carrots in every layer!

Ingredients:
– 9 lasagna noodles
– 1 lb carrots, peeled and thinly sliced
– 1 onion, finely chopped
– 3 cloves garlic, minced
– 1 lb ricotta cheese
– 1 cup grated Parmesan cheese
– 2 cups shredded mozzarella cheese
– 1/4 cup fresh basil, chopped
– 1/4 cup fresh parsley, chopped
– 1 tsp dried oregano
– Salt and pepper to taste
– Olive oil for cooking

Directions:
1. Preheat oven to 375°F (190°C). Cook lasagna noodles according to package instructions, then rinse with cold water and set aside.
2. In a skillet, heat olive oil over medium heat. Add onions and garlic, sauté until softened.
3. Add carrots and cook until tender, about 8-10 minutes. Season with salt, pepper, and oregano.
4. In a bowl, combine ricotta, Parmesan, basil, and parsley. Season with salt and pepper.
5. In a greased baking dish, layer noodles, ricotta mixture, carrot mixture, and mozzarella. Repeat for 3 layers.
6. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
7. Let it rest for 10 minutes before slicing and serving.
