Rhubarb Chia Seed Crisp
Indulge in the perfect balance of tart rhubarb and crunchy chia seeds with this irresistible dessert that’s sure to become a family favorite!

Ingredients:
– 4 cups rhubarb, chopped
– 1/2 cup granulated sugar
– 1 tbsp lemon juice
– 2 tbsp chia seeds
– 1/2 cup all-purpose flour
– 1/2 cup rolled oats
– 1/2 cup brown sugar
– 1/2 tsp cinnamon
– 1/4 cup unsalted butter, cold and cubed

Directions:
1. Preheat the oven to 375°F (190°C) and grease a baking dish.
2. In a bowl, combine rhubarb, granulated sugar, lemon juice, and chia seeds. Mix well and spread in the prepared baking dish.
3. In another bowl, mix flour, oats, brown sugar, and cinnamon. Add the cold butter and using your fingers, rub the mixture until it resembles coarse crumbs.
4. Sprinkle the oat topping over the rhubarb mixture evenly.
5. Bake for about 35-40 minutes until the top is golden brown and the rhubarb is bubbling.
6. Let it cool slightly before serving. Enjoy warm with a scoop of vanilla ice cream!
