Rhubarb Hemp Seed Crumble

Ingredients:
– 4 cups rhubarb, chopped
– 1/2 cup granulated sugar
– 1/2 tsp vanilla extract
– 1/2 cup all-purpose flour
– 1/2 cup rolled oats
– 1/4 cup hemp seeds
– 1/4 cup brown sugar
– 1/2 tsp ground cinnamon
– 1/4 cup unsalted butter, cold and cubed
Directions:
1. Preheat the oven to 375°F (190°C) and grease a baking dish.
2. In a bowl, combine rhubarb, granulated sugar, and vanilla extract. Spread this mixture evenly in the prepared baking dish.
3. In another bowl, mix flour, oats, hemp seeds, brown sugar, and cinnamon. Add in the cold butter and rub the mixture between your fingers until crumbly.
