Rhubarb Quinoa Crisp

Ingredients:
– 4 cups chopped rhubarb
– 1/2 cup granulated sugar
– 1/2 cup quinoa
– 1/4 cup all-purpose flour
– 1/4 cup brown sugar
– 1/2 tsp cinnamon
– 1/4 cup unsalted butter, cold and cubed
Directions:
1. Preheat the oven to 375°F (190°C) and grease a baking dish.
2. In a bowl, combine chopped rhubarb and granulated sugar, then spread the mixture evenly in the baking dish.
3. In another bowl, mix quinoa, flour, brown sugar, and cinnamon. Sprinkle this mixture over the rhubarb.
4. Dot the top with cubed butter.
5. Bake for 35-40 minutes or until the rhubarb is tender, and the topping is golden brown.
