Rhubarb Spelt Crisp
This tangy twist on a classic dessert will have you coming back for seconds (and thirds)!
Ingredients:
– 4 cups rhubarb, chopped
– 1/2 cup granulated sugar
– 1/2 cup spelt flour
– 1/2 cup rolled oats
– 1/4 cup brown sugar
– 1/4 cup unsalted butter, cold and cubed
– 1/2 tsp cinnamon
– 1/4 tsp salt
Directions:
1. Preheat the oven to 375°F (190°C) and grease a baking dish.
2. In a bowl, mix rhubarb and granulated sugar. Spread the mixture evenly in the baking dish.
3. In another bowl, combine spelt flour, oats, brown sugar, cinnamon, and salt.
4. Add in the cold butter and rub the mixture with your fingers until it resembles coarse crumbs.
5. Sprinkle the spelt mixture over the rhubarb in the baking dish.
6. Bake for 35-40 minutes until the top is golden brown and the rhubarb is bubbling.
7. Allow to cool slightly before serving. Enjoy with a scoop of vanilla ice cream!
