Rosemary-Garlic Rack of Lamb with Mint Gremolata
Impress your guests with this succulent rack of lamb infused with fragrant rosemary and garlic, topped with a refreshing mint gremolata.

Ingredients:
– 2 racks of lamb, frenched (about 16 oz each)
– 4 cloves garlic, minced
– 2 tbsp fresh rosemary, chopped
– Salt and pepper to taste
– 2 tbsp olive oil
– 1/2 cup fresh mint leaves, finely chopped
– Zest of 1 lemon
– 2 tbsp lemon juice
– 1/4 cup pine nuts, toasted

Directions:
1. Preheat the oven to 400°F (200°C).
2. In a small bowl, combine minced garlic, chopped rosemary, salt, pepper, and olive oil. Rub this mixture all over the racks of lamb.
3. Heat a large oven-safe skillet over high heat. Sear the lamb racks on all sides until browned, about 2 minutes per side.
4. Transfer the skillet to the preheated oven and roast the lamb for 20-25 minutes for medium-rare, or until desired doneness.
5. While the lamb cooks, mix together the mint, lemon zest, lemon juice, and toasted pine nuts in a bowl to make the gremolata.
6. Once the lamb is done, let it rest for 10 minutes before slicing into individual chops.
7. Serve the lamb chops topped with the mint gremolata.
