Saffron-Infused Seafood Risotto

Ingredients:
– 1 cup Arborio rice
– 4 cups seafood or vegetable broth
– 1/2 cup white wine
– 1 shallot, finely chopped
– 2 cloves garlic, minced
– 1/2 tsp saffron threads
– 1/2 lb mixed seafood (shrimp, scallops, mussels)
– 1/2 cup grated Parmesan cheese
– 2 tbsp butter
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)
Directions:
1. In a saucepan, heat the broth and keep it warm on low heat.
2. In a separate large skillet, melt 1 tbsp of butter over medium heat. Add shallot and garlic, sauté until soft.
3. Add the Arborio rice and saffron threads, stirring for 1-2 minutes until the rice is coated and translucent around the edges.
4. Pour in the white wine and cook until it is absorbed by the rice.
5. Begin adding the warm broth, one ladle at a time, stirring constantly and allowing the liquid to be absorbed before adding more.
6. After about 18-20 minutes, when the rice is creamy but still slightly firm, stir in the mixed seafood and cook for an additional 3-4 minutes until the seafood is cooked through.
7. Remove the skillet from heat, stir in Parmesan cheese and remaining butter. Season with salt and pepper.
8. Serve hot, garnished with fresh parsley.
