Saffron Seafood Paella with Chorizo
A colorful medley of seafood, fragrant saffron, and spicy chorizo come together in this vibrant Spanish dish that will transport your taste buds to the sunny shores of Spain!
Ingredients:
– 1 lb jumbo shrimp, peeled and deveined
– 12 oz mussels, cleaned and debearded
– 8 oz calamari, sliced into rings
– 6 oz chorizo, sliced
– 1 onion, diced
– 2 tomatoes, diced
– 2 cups Arborio rice
– 4 cups chicken or vegetable broth
– 1 tsp saffron threads
– 1 tsp smoked paprika
– Salt and pepper to taste
– Fresh parsley for garnish
Directions:
1. In a large paella pan or skillet, sauté chorizo until browned. Remove and set aside.
2. Add onion to the pan and cook until translucent. Stir in tomatoes and cook until softened.
3. Stir in rice, saffron, and paprika, coating the rice in the mixture.
4. Pour in broth and bring to a simmer. Season with salt and pepper.
5. Arrange shrimp, mussels, calamari, and chorizo on top of the rice mixture.
6. Cover and cook for 20-25 minutes until rice is tender and seafood is cooked through.
7. Garnish with fresh parsley before serving.
