Santa Fe White Chicken Chili
Warm up with a Southwestern twist on a classic comfort dish that’s sure to become a family favorite!

Ingredients:
1 lb boneless, skinless chicken breast, cooked and shredded
1 onion, diced
1 red bell pepper, diced
2 cloves garlic, minced
2 cans (15 oz each) white beans, drained and rinsed
1 can (4 oz) diced green chilies
4 cups chicken broth
1 tsp ground cumin
1 tsp dried oregano
1/2 tsp chili powder
Salt and pepper to taste
1/4 cup chopped fresh cilantro, for garnish

Directions:
1. In a large pot, sauté onion and red bell pepper until softened, about 5 minutes.
2. Add minced garlic and cook for another minute until fragrant.
3. Stir in shredded chicken, white beans, diced green chilies, chicken broth, cumin, oregano, chili powder, salt, and pepper.
4. Bring the chili to a simmer and let it cook for 20-25 minutes to allow flavors to meld.
5. Taste and adjust seasoning if needed.
6. Serve hot, garnished with fresh cilantro.
