Sheet Pan Steak and Vegetable Meal Prep

Ingredients:
– 16 oz grass-fed sirloin steak, sliced
– 2 bell peppers, sliced
– 1 red onion, sliced
– 1 zucchini, sliced
– 1 cup cherry tomatoes
– 2 tbsp olive oil
– 2 cloves garlic, minced
– 1 tsp dried oregano
– 1 tsp smoked paprika
– Salt and pepper to taste
– Fresh parsley for garnish
Directions:
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a bowl, mix olive oil, garlic, oregano, paprika, salt, and pepper.
3. Toss steak, bell peppers, onion, zucchini, and cherry tomatoes in the oil mixture until coated.
4. Spread the steak and vegetables evenly on the baking sheet.
5. Roast for 15-20 minutes, or until steak reaches desired doneness and vegetables are tender.
6. Divide into meal prep containers and sprinkle with fresh parsley before serving.
