Southwest Quinoa Salad
A colorful and flavorful fusion of quinoa, black beans, corn, and avocado that will transport your taste buds to the sunny Southwest!
Ingredients:
– 1 cup quinoa, cooked and cooled
– 1 can (15 oz) black beans, rinsed and drained
– 1 cup corn kernels
– 1 red bell pepper, diced
– 1 avocado, diced
– 1/4 cup fresh cilantro, chopped
– 1/4 cup lime juice
– 2 tbsp olive oil
– 1 tsp cumin
– Salt and pepper to taste
Directions:
1. In a large bowl, combine quinoa, black beans, corn, bell pepper, avocado, and cilantro.
2. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
3. Pour the dressing over the quinoa mixture and toss gently to combine.
