Spicy Maple Chicken & Coconut Rice

Ingredients:
– 4 boneless, skinless chicken breasts
– 1/4 cup maple syrup
– 2 tbsp soy sauce
– 1 tsp chili powder
– 1 cup jasmine rice
– 1 can (14 oz) coconut milk
– 1/2 cup water
– Salt and pepper to taste
– Fresh cilantro for garnish

Directions:
1. In a bowl, mix maple syrup, soy sauce, and chili powder. Marinate chicken breasts in the mixture for 30 minutes.
2. Heat a skillet over medium-high heat. Sear chicken breasts for 5-6 minutes per side until cooked through. Set aside.
3. In a saucepan, combine jasmine rice, coconut milk, water, salt, and pepper. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until rice is tender.
4. Slice the cooked chicken breasts and drizzle with any remaining maple sauce.
