Spinach with Garlic Meatballs
A flavorful twist on classic meatballs, these garlic-infused meatballs are served over a bed of nutritious spinach for a wholesome meal the whole family will love!
Ingredients:
– 1 lb ground chicken
– 1/2 cup breadcrumbs
– 2 cloves garlic, minced
– 1/4 cup grated Parmesan cheese
– 1 tsp dried oregano
– Salt and pepper to taste
– 4 cups fresh spinach
– 1 tbsp olive oil
– 1/4 cup chicken broth
Directions:
1. In a bowl, combine ground chicken, breadcrumbs, minced garlic, Parmesan cheese, oregano, salt, and pepper. Mix well and form into meatballs.
2. Heat olive oil in a skillet over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes.
3. Remove the meatballs from the skillet and set aside. In the same skillet, add chicken broth and spinach. Cook until the spinach is wilted.
4. Return the meatballs to the skillet, cover, and simmer for an additional 5-7 minutes until the meatballs are cooked through.
5. Serve the garlic meatballs over the bed of spinach and enjoy!
