Spring Garden Frittata with Goat Cheese
Celebrate the vibrant flavors of spring with this colorful and savory frittata loaded with fresh garden vegetables and creamy goat cheese.

Ingredients:
8 large eggs
1/4 cup milk
1/2 tsp salt
1/4 tsp black pepper
1 cup cherry tomatoes, halved
1/2 cup bell pepper, diced
1/2 cup zucchini, diced
1/4 cup red onion, thinly sliced
2 oz goat cheese, crumbled
1 tbsp fresh basil, chopped

Directions:
1. Preheat the oven to 350°F (180°C). In a bowl, whisk together eggs, milk, salt, and pepper until well combined.
2. Heat an oven-safe skillet over medium heat. Add a drizzle of oil and sauté cherry tomatoes, bell pepper, zucchini, and red onion until slightly softened.
3. Pour the egg mixture over the vegetables in the skillet. Sprinkle crumbled goat cheese on top.
4. Cook on the stovetop for 3-4 minutes until the edges begin to set.
5. Transfer the skillet to the preheated oven and bake for 12-15 minutes until the frittata is set and slightly golden.
6. Remove from the oven, sprinkle with fresh basil, and let it cool slightly before slicing and serving.
