Spring Leg of Lamb with Rosemary and Garlic
Celebrate the freshness of spring with this tender leg of lamb infused with aromatic rosemary and garlic, a paleo-friendly dish that connects you to nature’s flavors!
Ingredients:
– 1 (4-5 lb) bone-in leg of lamb
– 1/4 cup olive oil
– 6 cloves garlic, minced
– 3 tbsp fresh rosemary, chopped
– 1 tbsp fresh thyme, chopped
– 1 tsp sea salt
– 1/2 tsp black pepper
– Zest of 1 lemon
– Juice of 1 lemon
Directions:
1. Preheat oven to 350°F (175°C).
2. In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, pepper, lemon zest, and lemon juice to create a marinade.
3. Rub the marinade all over the lamb, ensuring it’s well coated.
4. Place the lamb in a roasting pan and cover with foil.
5. Roast for 2 hours, then remove foil and roast for an additional 30 minutes for a crispy exterior.
6. Let the lamb rest for 15 minutes before slicing thinly.
