Spring Vegetable Frittata with Goat Cheese
This colorful frittata bursting with fresh spring vegetables and creamy goat cheese is a delightful way to celebrate the season!

Ingredients:
6 large eggs
1/4 cup milk
1/2 cup goat cheese, crumbled
1 cup asparagus, chopped
1/2 cup cherry tomatoes, halved
1/2 cup red bell pepper, diced
1/4 cup red onion, finely chopped
Salt and pepper to taste
1 tbsp olive oil

Directions:
1. Preheat the oven to 350°F (175°C).
2. In a bowl, whisk together eggs, milk, salt, and pepper until well combined.
3. Heat olive oil in an ovenproof skillet over medium heat.
4. Add asparagus, cherry tomatoes, red bell pepper, and red onion to the skillet. Cook for 3-4 minutes until slightly softened.
5. Pour the egg mixture over the vegetables in the skillet. Sprinkle crumbled goat cheese on top.
6. Cook on the stovetop for 3-4 minutes until the edges start to set.
7. Transfer the skillet to the preheated oven and bake for 10-12 minutes until the frittata is set in the center.
8. Remove from the oven and let it cool slightly before slicing and serving.
