Spring Vegetables Cheesecake

Ingredients:
– 8 oz cream cheese, softened
– 1/2 cup sugar
– 1/4 cup sour cream
– 2 large eggs
– 1/2 cup mixed spring vegetables (peas, asparagus, carrots), finely chopped
– 1/4 cup grated Parmesan cheese
– 1/4 cup breadcrumbs
– Salt and pepper to taste
Directions:
1. Preheat oven to 325°F (165°C). Grease a 9-inch springform pan.
2. In a large bowl, beat cream cheese and sugar until smooth. Add sour cream and eggs, mixing well.
3. Fold in chopped vegetables, Parmesan cheese, breadcrumbs, salt, and pepper.
4. Pour mixture into the prepared pan and smooth the top.
5. Bake for 40-45 minutes until the center is set.
6. Allow the cheesecake to cool completely before refrigerating for at least 2 hours.
