Strawberry Rhubarb Crumble
This sweet and tangy dessert combines the flavors of ripe strawberries and tart rhubarb, topped with a crunchy oat crumble.
Ingredients:
– 2 cups fresh strawberries, sliced
– 2 cups rhubarb, chopped
– 1/2 cup granulated sugar
– 2 tbsp cornstarch
– 1/2 tsp vanilla extract
– 1 cup all-purpose flour
– 1/2 cup rolled oats
– 1/2 cup brown sugar
– 1/2 tsp cinnamon
– 1/4 tsp salt
– 1/2 cup unsalted butter, cold and cubed
Directions:
1. Preheat the oven to 375°F (190°C) and grease a baking dish.
2. In a large bowl, combine strawberries, rhubarb, granulated sugar, cornstarch, and vanilla extract. Mix well and transfer to the prepared baking dish.
3. In another bowl, mix flour, oats, brown sugar, cinnamon, and salt. Add in the cold cubed butter and use your fingers to rub the mixture until it resembles coarse crumbs.
4. Sprinkle the crumble mixture evenly over the strawberry-rhubarb filling.
5. Bake in the preheated oven for 35-40 minutes or until the fruit is bubbling, and the topping is golden brown.
6. Remove from the oven and let it cool slightly before serving.
