Sweet Potato and Kale Frittata with Feta
Start your day right with this flavorful frittata bursting with the goodness of sweet potatoes, nutrient-rich kale, and creamy feta cheese!
Ingredients:
– 8 oz sweet potatoes, peeled and diced
– 2 oz kale, chopped
– 4 oz feta cheese, crumbled
– 6 eggs
– 1/4 cup milk
– 1/2 tsp garlic powder
– Salt and pepper to taste
– 1 tbsp olive oil
Directions:
1. Preheat the oven to 350°F (180°C).
2. Boil the sweet potatoes until slightly tender, about 5 minutes. Drain and set aside.
3. In a skillet, heat olive oil over medium heat. Add kale and sauté until wilted, about 3-4 minutes.
4. In a bowl, whisk together eggs, milk, garlic powder, salt, and pepper.
5. Grease a baking dish and layer the sweet potatoes, kale, and feta cheese.
6. Pour the egg mixture over the vegetables and cheese.
7. Bake for 25-30 minutes until the frittata is set and golden on top.
8. Let it cool slightly, then slice and serve.
