Instructions
- Prepare the Sweet Potatoes:
- Boil sweet potatoes whole in skin for 40 to 50 minutes, or until done. Run cold water over the sweet potatoes, and remove the skin.
- Mash the cooked potatoes in a bowl until smooth.
- Preheat Oven:
- Preheat your oven to 350Β°F (175Β°C).
- Mix the Filling:
- In a large bowl, beat the mashed sweet potatoes with the butter until smooth.
- Add sugar, milk, eggs, nutmeg, cinnamon, and vanilla extract. Mix well until combined and creamy.
- Prepare the Pie Crust:
- Roll out the pie crust and fit it into a 9-inch pie plate. Trim and crimp the edges.
- Fill the Pie:
- Pour the sweet potato mixture into the prepared pie crust.
- Bake:
- Bake in the preheated oven for 55 minutes, or until a knife inserted in the center comes out clean.
- Cool:
- Place the pie on a wire rack and allow to cool to room temperature.
