Instructions

  1. Prepare the Sweet Potatoes:
    • Boil sweet potatoes whole in skin for 40 to 50 minutes, or until done. Run cold water over the sweet potatoes, and remove the skin.
    • Mash the cooked potatoes in a bowl until smooth.
  2. Preheat Oven:

  3. Mix the Filling:
    • In a large bowl, beat the mashed sweet potatoes with the butter until smooth.
    • Add sugar, milk, eggs, nutmeg, cinnamon, and vanilla extract. Mix well until combined and creamy.
