Tasty Rhubarb Stuffed Mushrooms

– 12 large mushrooms, stems removed
– 1 cup diced rhubarb
– 1/2 cup breadcrumbs
– 1/4 cup grated Parmesan cheese
– 2 cloves garlic, minced
– 2 tbsp olive oil
– Salt and pepper to taste
– Fresh parsley for garnish

Directions:
1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
