Vegetarian Chickpea and Sweet Potato Curry
Warm your soul with this comforting and aromatic curry packed with hearty chickpeas and sweet potatoes in a flavorful blend of spices!

Ingredients:
– 1 tbsp olive oil
– 1 onion, diced
– 3 cloves garlic, minced
– 1-inch ginger, grated
– 1 tsp ground turmeric
– 1 tsp ground cumin
– 1 tsp ground coriander
– 1/2 tsp chili powder
– 1/2 tsp cinnamon
– 2 medium sweet potatoes, peeled and cubed
– 1 can (15 oz) chickpeas, drained and rinsed
– 1 can (14 oz) diced tomatoes
– 1 cup vegetable broth
– Salt and pepper to taste
– Fresh cilantro, for garnish

Directions:
1. In a large pot, heat olive oil over medium heat. Add onion and cook until softened.
2. Stir in garlic, ginger, turmeric, cumin, coriander, chili powder, and cinnamon. Cook for 1-2 minutes until fragrant.
3. Add sweet potatoes, chickpeas, diced tomatoes, and vegetable broth. Season with salt and pepper.
4. Bring the mixture to a boil, then reduce heat and simmer for 20-25 minutes until sweet potatoes are tender.
5. Adjust seasoning if needed. Serve hot, garnished with fresh cilantro.
