Vegetarian Pad See Ew with Tofu
Experience the umami-packed flavors of traditional Thai cuisine in every bite of this vegetarian Pad See Ew with tofu – a delightful plant-based twist on a classic Asian favorite!

Ingredients:
– 14 oz wide rice noodles
– 14 oz extra firm tofu, cubed
– 3 tbsp soy sauce
– 2 tbsp dark soy sauce
– 2 tbsp vegetable oil
– 3 cloves garlic, minced
– 2 cups Chinese broccoli, cut into bite-sized pieces
– 2 eggs
– 1 tbsp sugar
– 1/2 cup vegetable broth
– 1/2 tsp white pepper
– 2 green onions, chopped

Directions:
1. Cook rice noodles according to package instructions. Drain and set aside.
2. In a wok or large skillet, heat vegetable oil over medium-high heat.
3. Add tofu cubes and cook until golden brown on all sides. Remove and set aside.
4. In the same wok, add garlic and Chinese broccoli. Stir-fry for 2-3 minutes.
5. Push the vegetables to the side and crack in the eggs. Scramble until cooked.
6. Add cooked noodles, soy sauce, dark soy sauce, sugar, and white pepper to the wok. Toss to combine.
7. Pour in vegetable broth and stir well to coat the noodles.
8. Add the cooked tofu back to the wok and mix gently.
9. Stir in chopped green onions and cook for another minute.
10. Serve hot and enjoy the authentic flavors of Pad See Ew with a vegetarian twist!
