Vegetarian Tom Yum Soup with Mushrooms

Ingredients:
– 4 cups vegetable broth
– 1 lemongrass stalk, smashed
– 3 kaffir lime leaves
– 2-inch piece of galangal, sliced
– 4 oz shiitake mushrooms, sliced
– 1 small onion, thinly sliced
– 2 tomatoes, cut into wedges
– 1 red chili, sliced
– 2 tbsp soy sauce
– 1 tbsp lime juice
– 1 tsp sugar
– Salt to taste
– Fresh cilantro leaves for garnish
Directions:
1. IIn a pot, bring vegetable broth to a simmer. Add lemongrass, kaffir lime leaves, and galangal. Simmer for 10 minutes to infuse the flavors.
2. Add mushrooms, onion, tomatoes, and chili to the pot. Cook for another 5 minutes until vegetables are tender.
3. Stir in soy sauce, lime juice, sugar, and salt. Adjust seasoning to taste.
4. Remove lemongrass, kaffir lime leaves, and galangal from the soup.
5. Serve hot, garnished with fresh cilantro leaves.
