White Chicken Chili Verde con Queso
Warm up with a creamy, cheesy twist on classic chili verde that will have your taste buds dancing!
Ingredients:
1 lb boneless, skinless chicken breast, cooked and shredded
2 (4 oz) cans diced green chilies
1 (15 oz) can white beans, drained and rinsed
1 cup chicken broth
1 cup salsa verde
8 oz cream cheese, softened
1 cup shredded Monterey Jack cheese
Salt and pepper to taste
Cilantro, for garnish
Directions:
1. In a large pot, combine shredded chicken, diced green chilies, white beans, chicken broth, and salsa verde. Bring to a simmer over medium heat.
2. Add cream cheese and Monterey Jack cheese, stirring until melted and well combined.
3. Season with salt and pepper to taste. Simmer for an additional 10-15 minutes.
4. Serve hot, garnished with fresh cilantro.
