  • 1 baguette, sliced into rounds
  • 1 1/2 cups grated Gruyère cheese

Instructions

  1. Caramelize the onions: In a large pot, melt the butter over medium heat. Add the onions and toss to coat with butter. Sprinkle the sugar over the onions and cook, stirring frequently, until the onions are caramelized to a deep golden brown, about 30-40 minutes.
  2. Add garlic and flour: Stir in the minced garlic and cook for 1 minute until fragrant. Sprinkle the flour over the onions and stir to combine. Cook for 2 minutes to remove the raw flour taste.
  3. Deglaze and simmer: Pour in the white wine (if using) and beef broth, then add the bay leaf and thyme. Bring the mixture to a simmer, then reduce the heat to low and simmer gently for 30 minutes. Season with salt and pepper to taste.
