Smoked Mac and Cheese

Ingredients:
8 oz elbow macaroni
1/4 cup butter
1/4 cup all-purpose flour
2 cups whole milk
2 cups shredded smoked Gouda cheese
1 cup shredded sharp cheddar cheese
1/2 tsp smoked paprika
Salt and pepper to taste
1/2 cup panko breadcrumbs
2 tbsp chopped fresh chives
Directions:
1. Preheat oven to 350°F (175°C) and grease a baking dish.
2. Cook macaroni according to package instructions until al dente. Drain and set aside.
3. In a large saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes to make a roux.
4. Slowly whisk in milk until smooth and thickened.
5. Add smoked Gouda and cheddar cheese, stirring until melted and creamy.
6. Season with smoked paprika, salt, and pepper.
7. Fold in cooked macaroni until well coated, then transfer to the prepared baking dish.
8. In a small bowl, combine panko breadcrumbs and chives. Sprinkle over the mac and cheese.
9. Bake for 20-25 minutes or until bubbly and golden on top.
10. Let it rest for a few minutes before serving hot.
